Hokkien Noodle Salad

Time to cook: 20 minutes | Serves: 2 | For under $25

Ingredients:

  • 1 bag of hokkien noodles - 450 grams 

  • 2 carrots, cut into matchsticks 

  • 6 spring onion stalks, cut into long diagonal 

  • 200 grams beans, cut in half and blanched 

  • 1 bunch of broccolini

  • 6 chicken thighs 

  • 1 BBQ chicken 

  • 6 tbsp Kecap manis 

  • Coriander

Procedure:

  1. Blanch the Hokkien noodles according to package instructions.

  2. Broccolini: trim the bottom, cut in half lengthwise, toss in a hot pan until nicely seared and coloured.

  3. Roughly shred the BBQ chicken.

  4. Mix in a big bowl: the cooked Hokkien noodles, carrot, beans, spring onion, coriander, shredded chicken and kecap manis. Toss well.

  5. Plate the noodle salad mix, add the seared broccolini on the side and top with the Amazing Asian salad topper.
