Pork Mince Meatballs On Rice Noodles Mixed With Nuoc Cam Dressing And Mint Salad

Time to cook: 20 minutes | Serves: 2 | For under $25

Ingredients:

  • Bean sprouts, washed 

  • Rice noodles, blanched according to package instructions 

  • Bunch of mint (or vietnamese mint), roughly chopped  

  • ¼ head of cabbage, shredded

  • Amazing Asian Salad topper

  • Soy sauce

Meatballs:

  • 500 grams pork mince 

  • 3 stalks spring onion, finely chopped

  • 2 cloves garlic, finely chopped 

  • 2 birds eye chillies, finely chopped

  • 2 tbsp soy sauce

  • 3 tbsp fish sauce

Nuoc Cam dressing:

  • 2 tsp of caster sugar 

  • 2 tbsp of hot water 

  • 1 tbsp fish sauce 

  • 1 tbsp rice vinegar 

  • Juice of 1 lime 

  • 1 birds eye chilli, finely chopped 

  • 1 clove of garlic, finely chopped

Procedure:

  1. Mix all the ingredients for Nuoc Cam dressing. Set aside.

  2. Combine all the ingredients for the meatball in a bowl and shape (1 tbsp of mixed pork mince for each meatball).

  3. Sear the meatballs in a hot, oiled pan until cooked. Set aside to rest.

  4. Assemble in a bowl: the rice noodles, bean sprouts, cabbage and mint.

  5. Add the meatballs, pour the Nuoc Cam dressing over and sprinkle the Amazing Asian Salad topper.
