Lemongrass Chicken Bowl
Time to cook: 20 minutes | Serves: 2
Ingredients:
4 chicken thighs
1 stick of lemongrass
2 tbsp of honey
Juice of 1 lime
1 clove garlic
2 tbsp fish sauce
1 tbsp soy sauce
1 tbsp oil
1 packet of rice noodles
¼ red cabbage
1 granny smith apple
1 carrot
Bunch of coriander
1 packet of Caravan Foods Amazing Asian
Kewpie mayo to serve with the slaw
Method:
Combine lime juice, soy sauce, fish sauce, garlic, honey, ginger and lemongrass and blend until you have a smooth sauce.
Marinate the chicken in the sauce for a couple of hours, or overnight.
To make the apple & cabbage slaw, slice the red cabbage, apple, carrots and coriander thinly, and combine in a bowl. Drizzle with kewpie mayo.
Cook your rice noodles as per the instructions.
On a medium/high heat, add olive oil to a pan and cook your chicken until browned and cooked completely through.
Once the chicken has cooled a little, slice thinly.
Assemble your salad by layering cooked vermicelli noodles, a little of the slaw, and your sliced chicken.
